Publication Food additives in Latin America: a descriptive analysis of the packaged food supply in five countries(2025) Zancheta, Camila; Grilo, Mariana; Ayala, Salvador; Duran, Ana; Canella, Daniela; Mora, Mercedes; Ulloa, Victoria; Tolentino, Lizbeth; Reyes, Marcela; Corvalan, CamilaBackground: Latin America is distinguished by diverse regulatory frameworks and evolving dietary patterns, including the weakening of traditional diets and the increasing consumption of ultra-processed foods (UPFs). Predominantly produced by transnational corporations, UPFs rely heavily on food additives to achieve desirable sensory properties (e.g., flavor, color), ensure food safety, and extend shelf life. Over the past decade, research has increasingly shown that higher consumption of UPFs is associated with poor health outcomes, and food additives have emerged as a potential mechanism underlying this association. However, few studies have systematically analyzed the presence of food additives in the food supply. This study aimed to assess the distribution and patterns of food additives in packaged foods from five Latin American countries. Methods: Data were obtained from packaged foods and beverages sold in supermarkets in Brazil (2017; n = 9,673), Mexico (2017; n = 15,846), Chile (2018; n = 13,913), Colombia (2018; n = 8,282), and Ecuador (2019; n = 2,083). We used the list of ingredients to search for food additives described in the Codex Alimentarius. We assessed the prevalence of specific food additives, categorized their functional classes, and applied exploratory factor analysis to identify patterns of food additive use, overall and in each country. Results: Food additives were present in over 75% of the studied products, ranging from 76.1% in Colombia to 84.0% in Ecuador. Food categories with the highest prevalence of additives (> 90%) included confectionery, dairy products, bakery items, and meat products. Most products contained two or more additives (64.3%); nearly 10% contained ten or more. We observed consistent results on the most used additives (i.e., flavorings, citric acid, phosphates, and lecithin) and patterns of food additives used across countries, although differences were observed in the use of specific additives, particularly low-calorie sweeteners and colorings. Conclusion: Food additives are widely used in the packaged food supply of Latin American countries, and variations in the use of specific food additives likely reflect differences in regulatory frameworks, industry practices, and consumer preferences across countries. Given the increasing concern about the potential health effects of food additives, there is an urgent need to strengthen monitoring efforts and further investigate population-level exposures and associated health outcomes.Publication Geospatial Distribution of Food Environments and Their Association with Sociodemographic Factors in Two Mid-Sized Chilean Cities(2026) Pinheiro Fernandes, Anna Christina; Ayala, Salvador; Quintiliano Scarpelli Dourado, Daiana; Marques, María; Araneda, JacquelineBackground/objectives: The spatial interaction between obesity, diet-related chronic diseases, premature mortality, food environments, and social determinants of health is a global concern. This study aimed to analyze the spatial distribution of healthy and unhealthy food outlets in two medium-sized cities in southern Chile. Methods: A cross-sectional observational study was conducted to characterize the food environment in two medium-sized cities in Chile. Food outlets were geolocated and classified as healthy, regular, or unhealthy, and into four food environment categories (institutional outlets, informal markets, formal markets, and restauration) using validated instruments. Results: Of 1972 identified sites, 1949 were geolocated. Among these, 246 (12.6%) were classified as healthy, 461 (23.7%) as unhealthy, and 1242 (63.7%) as regular. Food environments comprised 1441 stores (73.9%), 366 restauration (18.8%), 136 street food outlets (7.0%), and six institutional food outlets (0.3%). The two lowest socioeconomic quintiles (Q1-Q2) exhibited a lower proportion of healthy food outlets (39.4%). Significant positive spatial autocorrelation was observed for stores, restaurants, and street food outlets (p < 0.005). Conclusions: Food environments were unequally distributed, with a higher density of healthy food outlets in areas characterized by greater population density and higher socioeconomic status. The observed spatial autocorrelation highlights the need for targeted public health interventions to reduce inequalities in access to healthy foods. These findings provide evidence to support policies aimed at promoting more equitable and healthier food environments in medium-sized cities.Publication Prevalence and Distribution of Salmonella in Water Bodies in South America: A Systematic Review(2025) Gonzalez, Makarena; Palharini, Rayana; Ferreira, Felipe; Ayala, Salvador; Undurraga, EduardoThe presence of Salmonella in rivers, lakes, or beaches in South America represents a challenge to public health and aquatic ecosystems. This review explores the distribution, prevalence, and the main factors contributing to the survival and spread of Salmonella, including wastewater discharge, agricultural runoff, and climatic variables such as high temperatures and precipitation. These factors also facilitate the distribution of multidrugresistant strains in water. The review is based on bibliographic searches in various databases, focusing on Salmonella species, South American countries, and types of water bodies. Predominant serovars include S. Enteritidis and S. Typhimurium, with S. Typhi and S. Panama frequently detected in Chile, S. Enteritidis in Argentina, and S. Typhimurium in Brazil. Less common serovars, including S. Dublin and S. Paratyphi B, were identified, along with subspecies such as diarizonae and houtenae. These findings highlight the role of environmental, physicochemical, and anthropogenic factors influencing Salmonella dynamics. The review identifies research gaps, advocating for further studies to better understand the interactions between Salmonella, climate change, and human activity. Strengthening surveillance and mitigation strategies is crucial to protect water resources and public health in South America.
